Summer Treats: Coconut Chai Popsicles


Happy Friday Everyone!

Today I bring you a yummy yet refreshing treat that I came up with while I was searching for a healthy popsicle recipe. Most of the ones that I saw had a ton of fruit and I was in the mood for something a little bit more unique. I am sure I’m not the first person to thing of this idea, but I am sure glad I did because it’s so delicious and perfect for the hot summer days.


Here is what you will need:

– Coconut Chai Black tea.

– Your favorite sweetener


-Popsicle molds








These are so simple to make and are a great treat to cool off in the summer! Feel free to customize them with any other tea you would like.

Happy Belated Pi Day: 3.141592…


Happy Monday Everyone!

Sorry I was absent this past week, but life got crazy hectic and I had to focus my energy on my other responsibilities. I hope you all can understand and will accept this post as a  apology. So if you stopped and looked at the calendar this weekend you will realize that on Saturday was pi day! Wait what do you mean you didn’t notice?! Well that’s okay I figured it would be a great idea to relieve pi day on my blog by sharing the pumpkin pie that I made to celebrate this glorious day.

I hope you all enjoy and that if you haven’t had pie this weekend that you rectify your wrong and get some pie ASAP. You can find the original recipe I used here.

What you will need:

-Pre-made pie crust

-Pumpkin Pie puree

-Sweet and Condensed Milk

-Pumpkin Spice

-2 eggs



Mix Pumpkin Puree and pumpkin spice in a pot over low heat. This will help get rid of the can taste and will make mix the ingredients a lot smoother. Once the mixture is hot add the Sweet and condensed milk. Bring it to a boil and let sit for 10- 15 minutes then add the eggs. Pour the mixture into your pie pan with your pre-made pie crust rolled out. Place in your over at 425 for 15 minutes then lower the temperature to 350 and let cook another 30-45 minutes.

Sweet Treat: Oreo Cheesecake Truffles

Valentine’s is just around the corner and I hope everyone has a great weekend celebrating this holiday that surrounds love and friendship. For today’s post I have a super easy treat that will impress everyone you love. Everyone that has had these absolutely loves them and they are always a nice little change from all the typical dessert.

What you will need:

– One package of Oreos

-Cream Cheese

-Semi-sweet Chocolate



-Baking Sheet

-Wax Paper



Step One: Crush your Oreos as fine as you can. If you don’t have a fancy machine like I do you can place your Oreos into a plastic bag and crush them with a rolling pin.


Step Two: Mix the Cream Cheese with the crushes Oreos.


Step Three: Form small bite size balls and place onto a baking sheet lined with parchment paper. Place in the Freezer for 30+ minutes.



Step Four: Cut your Kisses to top your Truffles with.


Step Five: Melt your chocolate in a water bath and add milk to make a smoother batter.


Step Six: Dip your chocolate balls into the melted chocolate and set back on the baking sheet.



Step Seven: Top with the shredded Kisses. Place back in the fridge for and hour and enjoy!

A Sweet Treat: Mini Autumn Cheesecakes

If you have been following my blog for a while you will remember I posted a recipe on an Autumn Cheesecake I made. If you fancy you can read it here. Today I wanted to tackle making a mini version for a special valentine’s day treat. I hope this gets you excited for Valentine’s Day and the couple of post I will have dedicated to this day of love.


First off let’s go over what you will need:

-Premade mini gram cracker pie crusts

-Cream Chesse

-Vanilla Extract



-one small apple



Step One: Mix the cream cheese, eggs, vanilla and sugar together.



Step two: Cut apples into half hearts and sprinkle a little bit of sugar and cinnamon.



Step Three: Fill pie pan with cheesecake filling and add your apples on top.

Food Fridays: Whole Wheat Crepes w/ Banana & Strawberries

Today I bring you a yummy healthy breakfast recipe. I absolutely love these whole wheat crepes they are delicious and filling for any long day you may have. This recipe comes from the book: lose weight the smart low-carb way by Bettina Newman, r.d.,and David Joachim. I’m not sure if you can get this book now a days since it was published in 1997.

I will provide the recipe for anyone that is interested in recreating this ridiculously easy breakfast.


1 cup of whole grain pastry flour (I just used whole wheat flour)
1/4 teaspoon of Salt
1 egg
1 cup + 3 tablespoons of unsweetened soy milk or whole milk
1 1/2 teaspoon of Vanilla Extract
2 teaspoons of butter
1-2 tablespoons of water

1/2 cup of plain yogurt (I used vanilla yogurt)
1 banana, cut into diagonal slices
5-10 Strawberries cut in slices
1/2 teaspoon of cinnamon


How to make the crepes:
In a large bowl, combine the flour and salt. In a small bowl, beat the egg, then stir in the milk and vanilla. Pour into the flour and mix well. Melt 1/2 teaspoon of butter into a nonstick skillet over medium heat. Pour 3 tablespoons of batter into the skillet and tilt the skillet to coat the bottom in a thin layer. Cook the first side until nicely browned, about 2 minutes. Flip using a spatula and cook the second side for 1 to 2 minutes. Slide crepe onto a plate and cover in foil while you make the remainder of the crepes.




How to assemble the filling:
Place a crepe on a serving plate, attractive side down, and spread with 1 tablespoon of yogurt. Arrange the bananas slices and strawberries. Top off with a sprinkle of cinnamon and roll. Continue assembling the remainder of the crepes.

Food Fridays: Easy Tilapia


It’s Friday Everyone! I am excited to bring you a new recipe every single Friday for your enjoyment. Last month I focused on desserts and sweets so I figured I would mix it up and show you a supper simple recipe for one of my favorite fish, Tilapia.


Here is what you will need:
-One medium sized Tilapia
-Black ground pepper
-Garlic powder
Feel free to add a sprinkle of lime or lemon or any other spice you enjoy.
-Aluminum Foil


This dish is super simple and takes about 25 minutes from start to finish. Once all of the spices are on you piece of fish you will to wrap it onto the aluminum foil to preparing it for the oven.


I cook my fish in a 350 degree oven for about 15-20 minutes. You get a nice tender and flavorful taste and it’s super healthy and quick.

Feel free to cook up some broccoli, green beans as sides and you have a lovely meal.
