On Sunday I went over to my friend’s house and we decided to teach me how to make proper homemade bread. Let’s just say that it was a long process which included two episodes of Downton Abbey. I will have to try to do this again.
Let’s start off with what you will need.
-1/2 cup of yellow cornmeal
-1/3 cup of brown sugar
-1-3 teaspoon of salt
Gradually stir in 2 cups of boiling water
1/4 cups of oil
*Make sure you let this cool to room temperature before adding anything to it.
2pkg. of dry yeast in 1/2 cup of warm water (2 tablespoons of yeast)
If you don’t want that much bread you may add only one pkg. of yeast.
Then add yeast to room temperature cornmeal mixture
& Beat in:
3/4 cup whole wheat flour
1/2 cup of rye flour
By hand stir in
4 1/4 -4 1/2 cup of unbleached white flour
Then knead by hand.
Cover the dough with a bit of oil. This keep it from drying out.
Once it has risen cut it in half and get all of the air bubbles out of the dough.
Then form your loaf and rolls
Get creative and use different containers.
Bake for 15-25 minutes (roll take 15 minutes, loaf 25 minutes)
So ours double more than expected feel free to cut your portions smaller and make one more loaf so it doesn’t look like it wants to eat you. I had a blast make this with my friend and I will have to try this out again, sometime soon.
